The Project Story
The objective of this product development project was to create a next-generation high-protein breakfast cereal made from moong beans that delivers superior nutrition without compromising on taste, crunch, or visual appeal. Adhrysa Lifescience developed a versatile range of Moong Loops in Strawberry, Dark Chocolate, and Mixed Berry variants, combining innovative cereal processing with clean-label ingredients to create a wholesome, protein-rich breakfast solution suitable for children, adults, and health-conscious consumers. Every formulation was optimized for crisp texture, flavour retention, shelf stability, and scalable commercial manufacturing while maintaining an attractive premium packaging concept.
The Challenge
Developing a cereal primarily based on moong bean protein required overcoming several formulation complexities, including minimizing the natural legume aftertaste while preserving the characteristic light, crunchy loop structure. Maintaining vibrant natural flavours across multiple variants without affecting moisture content, ensuring consistent expansion during processing, achieving extended shelf life, and balancing nutrition with consumer-friendly taste and texture demanded extensive formulation trials and process optimization.
