The objective of this frozen food development project was to formulate a premium-quality frozen samosa patti (samosa sheets) that delivers exceptional crispness, flexibility, and consistent performance for commercial food manufacturers, QSRs, cloud kitchens, and retail consumers. Adhrysa Lifescience optimized the dough composition and sheet-processing technology to produce ultra-thin, easy-to-fold pastry sheets with excellent handling properties, ensuring perfectly shaped samosas that remain crispy, flaky, and golden after frying or baking while supporting large-scale industrial production.
The Challenge
Creating an ideal frozen samosa patti formulation required balancing dough elasticity with sufficient strength to prevent tearing during folding and filling. Additional formulation challenges included maintaining sheet flexibility after freezing, minimizing moisture migration, preventing cracking during thawing, ensuring consistent thickness, and achieving the desired crispy, blistered texture after cooking without compromising shelf life or manufacturing efficiency.
