The Project Story
Developing a premium Mushroom Coffee range required combining the rich taste of coffee with the scientifically backed benefits of functional mushrooms without compromising flavour, aroma, or consumer experience. The objective was to formulate multiple wellness-focused variants that deliver focus, energy, immunity, and cognitive support while maintaining excellent solubility, clean-label ingredients, and a smooth, café-style taste. The project also focused on creating a formulation suitable for commercial manufacturing with consistent quality and extended shelf stability.
The Challenge
Creating a functional mushroom coffee presented several formulation challenges, including masking the earthy and bitter notes of medicinal mushrooms while preserving the authentic coffee profile. Achieving instant dispersion without sedimentation, maintaining the stability of bioactive mushroom extracts during processing, balancing flavour across multiple functional blends, and ensuring moisture control for long shelf life required extensive R&D trials, ingredient optimisation, and process refinement.
