The Project Story
To capitalize on the growing demand for premium Ready-to-Drink (RTD) cocktails, our client partnered with Adhrysa Lifescience to develop a vibrant portfolio of bar-quality beverages that combine authentic mixology with long shelf life and commercial scalability. The objective was to formulate a collection of refreshing cocktails—including Piña Colada, Mojito, Sex on the Beach, Margarita, Blue Lagoon, and Cosmopolitan—that deliver consistent flavour, visual appeal, and drinking experience directly from the bottle.
Our beverage innovation team executed the complete development program, beginning with flavour architecture and ingredient compatibility studies, followed by formulation optimization, alcohol integration, stability evaluation, colour preservation, packaging validation, and pilot-scale production. Every formulation was carefully engineered to reproduce the complexity and freshness of freshly prepared cocktails while ensuring manufacturing efficiency and regulatory compliance.
The Challenge
Developing shelf-stable RTD cocktails required overcoming several technical challenges associated with combining fruit juices, botanical extracts, natural flavours, sweetening systems, acidulants, and alcohol into a perfectly balanced beverage.
Maintaining clarity, colour vibrancy, and flavour integrity throughout storage was particularly challenging, as citrus oils, fruit concentrates, and natural extracts can interact with alcohol and lead to flavour degradation or sedimentation. Each cocktail required its own optimized acidity profile, sweetness balance, carbonation compatibility (where applicable), and alcohol integration to recreate the authentic taste of freshly mixed beverages.
Another critical aspect involved preventing flavour loss, colour fading, and ingredient separation during shelf life while ensuring packaging compatibility, microbial stability, and production consistency across commercial-scale batches.
