The Project Story
To address the growing demand for healthier ready-to-drink beverages, our client partnered with Adhrysa Lifescience to develop a premium range of Ready-to-Drink Lemon Tea beverages that combine authentic brewed tea character with refreshing fruit flavours and reduced-calorie formulations. The objective was to create a clean, refreshing beverage portfolio featuring Classic Lemon, Peach Lemon Tea, and Green Lemon Tea, offering excellent taste, natural tea infusion, and long shelf life while meeting modern consumer preferences for low-calorie functional drinks.
Adhrysa Lifescience executed the complete beverage innovation program, beginning with tea extract selection, flavour profiling, sweetness optimization, and acid balance studies, followed by formulation development, thermal process validation, stability assessment, packaging compatibility, and pilot-scale manufacturing. The result was a commercially scalable RTD tea platform that delivers refreshing flavour, visual clarity, and premium sensory quality in every sip.
The Challenge
Developing a clear Ready-to-Drink Lemon Tea with natural tea extracts and fruit flavours required overcoming several formulation and processing challenges. Tea polyphenols are highly sensitive to pH, heat, oxygen, and light, making it difficult to maintain colour, flavour, and clarity throughout the intended shelf life.
Achieving the ideal balance between tea bitterness, citrus acidity, sweetness, and fruit flavour required extensive formulation optimization across each variant. Preserving the fresh aroma of lemon, peach, and green tea while minimizing flavour degradation during thermal processing demanded multiple laboratory trials and process refinements.
Additional challenges included preventing haze formation, sedimentation, and flavour fading, while ensuring microbiological safety, packaging compatibility, and beverage stability under ambient storage conditions. Every formulation underwent comprehensive sensory evaluation, accelerated shelf-life studies, and pilot-scale validation before commercialization.
