We successfully enhanced the shelf life of Solkadi, a traditional Konkan beverage made from coconut milk and kokum extract, while retaining its authentic taste, probiotic benefits, and nutritional value. The project focused on developing a stable, preservative-free, clean-label formulation suitable for large-scale production and commercial distribution.

Solkadi, rich in antioxidants, probiotics, and digestive properties, is a refreshing drink consumed widely in India. However, its short shelf life due to coconut milk’s instability and microbial spoilage posed a challenge for commercial scalability. Our R&D team worked on natural preservation techniques, optimized pasteurization, and packaging innovations to increase shelf stability while keeping the product clean-label and consumer-friendly.
