The Challenge
Developing a nutrient-dense multigrain bread required overcoming several formulation and processing complexities. Higher grain and seed inclusion often resulted in dense crumb structure, reduced loaf volume, moisture migration, and shorter shelf life. Achieving the right dough elasticity while maintaining softness and preventing excessive firmness during storage demanded multiple formulation refinements. Additionally, balancing natural ingredients with commercial-scale baking stability, consistent texture, and appealing flavour profiles required extensive laboratory trials and process optimization.

The final formulation delivered a soft, fibre-rich multigrain bread featuring excellent loaf volume, uniform crumb structure, and enhanced nutritional value. The optimized recipe incorporated carefully selected whole grains and seeds to provide improved texture, balanced flavour, and prolonged freshness while supporting clean-label positioning. The formulation is suitable for commercial bakery production with consistent processing performance, excellent slicing characteristics, and scalability for large-volume manufacturing.
