The Project Story
To meet the increasing demand for premium convenience foods with authentic Italian taste, our client partnered with Adhrysa Lifescience to develop a high-quality Spaghetti Pasta that delivers superior cooking performance, excellent texture, and consistent quality for retail and foodservice applications. The objective was to formulate a pasta product that maintains its firmness after cooking while complementing a wide range of sauces and recipes without compromising nutritional quality or processing efficiency.
The development program focused on optimizing the complete manufacturing process—from flour selection and dough hydration to extrusion technology, drying profiles, cooking characteristics, and shelf-life stability. Every stage was scientifically engineered to produce spaghetti with excellent structural integrity, ideal bite (al dente texture), and reliable performance during commercial production. Through extensive laboratory research, pilot-scale trials, and manufacturing validation, Adhrysa Lifescience successfully transformed the concept into a market-ready pasta solution designed for large-scale commercialization.
The Challenge
Developing premium spaghetti with consistent cooking quality, firmness, and texture required precise control over ingredient functionality and processing conditions. Selecting the optimal wheat flour characteristics, protein content, and gluten strength was critical to achieving a strong pasta matrix capable of maintaining its shape during cooking.
Extensive laboratory studies were conducted to optimize dough hydration, mixing parameters, extrusion pressure, and drying cycles to prevent cracking, breakage, excessive starch loss, and surface defects. Achieving uniform moisture distribution while maintaining long shelf life without compromising cooking performance demanded careful process optimization.
Another major challenge involved ensuring the spaghetti retained its elasticity and al dente bite after cooking while minimizing stickiness and cooking loss. Multiple pilot-scale manufacturing trials, cooking evaluations, packaging studies, and stability assessments were performed to ensure consistent product quality across commercial production batches.
